Our Main Product - True Cinnamon
Cinnamon has been known from remote antiquity, and it was
so highly prized among ancient nations that it was regarded as a gift fit for
monarchs and other great potentates. Cinnamon is native to the Indian
subcontinent. Cinnamon captured the headlines lately, mostly because of its use
as health product as well as the sharp price advance during recent months. So
this may be an opportune time to take a closer look at one of the oldest spices
known to man.
There has been confusion between Cinnamon (Cinnamomum
Zeylanicum) and Cassia (Cinnamomum Cassia) – this
misunderstanding goes back over 4000 years and still exists today.
Cinnamomum Zeylanicum or True Cinnamon is native to Sri Lanka
(Ceylon) and is very mild. The name cinnamon comes from Greek kinnámōmon,
itself ultimately from Phoenician. The botanical name for the spice
Cinnamomum Zeylanicum is derived from Sri Lanka`s former (colonial)
name, Ceylon. Ceylon Cinnamon has no
coumarin, and very safe.
Cassia. is from Indonesia, China or Vietnam. Cassia`s flavour, however, is
less delicate than that of true cinnamon; for this reason, the less expensive
cassia is sometimes called "Bastard Cinnamon" or “Chinese Cinnamon”. European
health agencies have warned against consuming high amounts of
cassia bark, because of its
coumarin content. Matara and Galle are lower altitude areas in Sri Lanka
where the best quality Cinnamomum c. is grown. In general, all our Cinnamon is
from Sri Lanka.
Cinnamon is harvested by growing the tree for two years and
then
coppicing it. The next year, about a dozen shoots will form from the roots.
These shoots are then stripped of their bark, which is left to dry. Only the
thin (0.5 mm) inner bark is used; the outer woody portion is removed, leaving
metre-long cinnamon strips that curl into rolls ("quills") on drying; each dried
quill comprises strips from numerous shoots packed together. These quills are
then cut into 5–10 cm lengths for sale. The higher the oil content, the better.
It is the oil that determines the strength of the flavor.
The best quality bark is taken from the trunk of the tree, lesser qualities from
branches and broken pieces. Volatile oil content ranges from 0.5% to 1%.
Our Cinnamon is freshly ground in Sri Lanka. A small
percentage of oil is lost during the grinding process. Most of the cinnamon
producers do not always clearly indicate whether the oil content they claim is
before or after grinding. We will be glad to provide you with a certificate of
